Stuffed Peppers!



Stuffed peppers for supper!
Cut the tops off the peppers and dice the tops well. Clean out the peppers of seed core and wash thoroughly. Dice one yellow onion, saute with the diced pepper. Take one package of turkey sausage, remove from casing, add to the onion pepper mixture, cook until
crumbly and done. I actually use a potato masher to expedite the crumble. Add one 12 oz can of stewed tomato, I use my own from the garden. While doing this have a recipe of rice cooking, 2 1/2 cups water to 1 cup rice. When the rice is done mix everything together. Spoon into the peppers. Take a hunk of cheese, either motzerella, monteray jack or provolone and stick it into the middle of the pepper mixture. Bake about 45 minutes to 1 hour till the pepper is tender. This recipe should make 4 or 5 nice sized peppers. Serve with a hunk of crusty bread. Yummy, enjoy!
